Put the sesame seeds in water, wash sesame seeds in the water. Drain them with filter.
Very important step
In tamil they called it as Thevikarathu which means Drained Sesame are put in the chekku and using oolakai removing the sesame shell partially and dry it.
Next Toast them on a medium flame. Continuously stirring the seeds is necessary to prevent them from turning black on one side..
Unevenly grind the toasted sesame seeds in a coffee grinder.
Prepare ragi kali (ராகி களி)
Crush the palm jaggery
Add the grinded sesame seeds and crushed jaggery into a mixer gradually to bind until the mixture comes together finely.
Finely grind the Mixture by adding kali gradually (raggi) . If you pinch on it, it should hold shape. Remove onto a plate. Make small balls and set aside (as you roll the mix to balls, the color changes to a darker shade Oil will come from the Sesame balls)
Store in moisture free area for up to a week. No need to refrigerate. Handle with moist free hands.
Use Palm Jaggery and black sesame seeds in equal proportions.
