Coconut Palm Jaggery is made from the sweet flower blossom nectar (Neera - Coconut Flower Sap) of the coconut tree. The unfermented coconut sap is collected and boiled. The semisolid jaggery solidifies gradually by the cooling effect of the atmosphere into a crystallized hard substance given different shapes by pouring the mixture in the hallow bamboo molds or granulated. Neera, the non-alcoholic and nutritious drink from the immature inflorescence of coconut tree. Neera, also called palm nectar, is a sap extracted from the inflorescence of coconut generally performed before sunrise. It is cultivated organic without damage to the environment, above all Palm sugar is an ancient food which has to be carried over to coming generations! This product is the livelihood of the villagers.
