Gundu Vellam also known as Organic Cane Jaggery made via ancient techniques by crushing sugar cane and boiling the juice to more than 200 degree celsius in large, shallow, round bottom vessels. It is mainly used to prepare sakkarai pongal and for general home use. Gundu Vellam comprises of up to 50% sucrose, up to 20% invert sugars, and up to 20% moisture and traces of mineral salts, iron and some fiber. It is prepared without any chemical adulterants hence it will be dark in colour.
